An Interview with Lyndi Cohen

Rapidly expanding healthy fast food brand Soul Origin is thrilled to announce its partnership with well-known Australian dietitian and nutritionist Lyndi Cohen, AKA The Nude Nutritionist.
A regular nutrition consultant on Channel 9’s Today Extra and a non-believer in “diets”, Lyndi’s mantra of “everything in moderation”, eating mindfully, incorporating wholefoods and eating foods you enjoy is perfectly aligned with Soul Origin’s own food philosophy.

Tell us about your new partnership with Soul Origin and how it came about.

I have loved Soul Origin ever since I first ate there a few years ago. In fact, I love Soul Origin so much I approached them to ask how I could get involved! As fate would have it, Soul Origin was looking to partner with a nutritionist to help develop exciting new menu options and champion the message that healthy eating doesn’t need to be fussy, complicated or boring. For me, jumping on board with Soul Origin was a no-brainer because the company shares my back-to-basics approach to healthy eating.

How does your food philosophy match with theirs?

I don’t subscribe to the old-school nutrition philosophy of counting calories and asking for salad dressing on the side. I believe healthy food should taste amazing. When food tastes great, it’s easier to consistently make healthier choices and fill up on plenty of the good stuff. Soul Origin makes it easy to make healthy choices and eat mindfully. The first thing you notice when you walk into a Soul Origin store is the line of colourful salads, tempting you to fill up on fresh vegetables. What I particularly love is that Soul Origin food isn’t fussy and pretentious. It’s simply great tasting, healthy food that every Aussie can enjoy.

What projects will you be working on with them?

Anything exciting on the horizon? So far, it’s been a lot of fun working with Soul Origin! We have just launched an innovative and delicious Rainbow Salad range along with a new line of cold-pressed juices that are perfectly portioned at 250ml. Soon, we will be launching an exciting new campaign to help get Aussie’s to eat more mindfully. We believe making time to enjoy food and eating mindfully is just as important as the nutrients you put in your body. When you choose to eat mindfully, food not only benefits the body but it also fuels your soul.

What message do you want to get out to the public via this partnership?

Healthy eating doesn’t have to be complicated or hard. You don’t need supplements, shakes or magic potions to feel amazing in your body! The reality is that less than 4% of Australians eat enough vegetables each day. If all Aussies increased their veggie intake by just 10%, equivalent to eating one small Soul Origin salad a week, the country would save $100 million per year and everyone’s health would benefit.At Soul Origin, we are making it easy to fill up on plenty of fresh vegetables. Our mission is to help every Aussie know that healthy eating is as simple as eating more vegetables. It truly is one of the most powerful changes we can advocate.

What are three things you wish people knew about nutrition?

1. Healthy eating doesn’t have to be stressful or complicated – simply getting back to basics by eating more vegetables can make a really big impact.

2. Eat the rainbow and count nutrients, not calories.

3.You have to enjoy the food you eat. It’s the only way healthy eating can be sustainable.

What is your favourite Soul Origin product and why?

At the moment, I particularly love the new rainbow salad menu! I am obsessed with the ‘Green Machine’ salad made with freekeh, green lentils, kale, edemame, wasabi peas and a matcha dressing. When I eat at Soul Origin, I always pick a mix of my favourite salads. It’s the best! It means I get a healthy mix of nutrients and flavours and can never get bored. Variety is key when it comes to nutrition and eating at Soul Origin is such an easy way to keep healthy eating interesting and fun.
